(Cretan omelette)

This recipe was a favourite of Steve Smith's’s Greek mama: “When unexpected guests arrived right on a meal time, Mama could whip this together within 20 minutes - and I don’t recall there ever being any leftovers!”


8 Craft Farmers’ eggs
pepper and salt to taste
1 large onion
400gm tin peeled tomatoes
approx. 1/2 cup of olive oil
6-8 small courgettes
2-3 cloves garlic


Slice onions and cook gently in the olive oil in a large frying pan.
Add cubed courgettes.
Cook to desired firmness.
Add sliced garlic, salt and pepper.
Beat eggs in a separate bowl.
Reduce heat and add beaten eggs stirring gently until nearly cooked.
Add tomatoes from the tin (squash them first) and cook a little more.
Serve immediately.
